Sweet Potato Chicken Curry

This round doing Whole30, I wanted to try some new things...
so sweet potato chicken curry it is!
It is whole30 approved, paleo, gluten & dairy free, 
and there is an option to make this vegan!


Serves: 8
Prep time: 10 minutes
Cook time: 45 minutes

What you need: 
2 lbs. sweet potatoes chopped
1/2 avocado
2 chicken breasts (avoid this if vegan)
1/2 cup roasted red peppers
2 tbsp. tahini
2 tbsp. red curry paste
2 tbsp lime juice
4 tbsp cilantro


To make: 
Turn the oven to 425 degrees and bake sweet potatoes until soft.
Once baked, cut sweet potatoes into bite-sized chunks.
Bake chicken.
Once finished, cut up chicken until shredded.
In a food processor, add avocado, roasted red peppers, tahini, red curry paste, and lime juice. 
This mixture should turn into a smooth paste.
Place a pan on the stove on medium heat. 
Mix potatoes, chicken, curry mixture, and cilantro for 5 minutes.
Serve.
