22 Minute Hard Corps: the Beginning

I need a change in my routine; I've plateaued, I want a restart in my nutrition, and I've got my 10 year high school reunion coming up. Today starts day 1 of week 1. It's not too late to join our accountability group AND it's not too late to snag it while it's on sale. Let's support one another!

Egg Stuffed Peppers



Serves: 2
Prep time: 15 minutes
Cook time: 50 minutes

What you need: 
2 large bell peppers
3 eggs
1/2 cup mushrooms (or any veggie you'd like)
1 onion
1 1/2 cups spinach
1/2 cup kale
about 7 cherry tomatoes
1/2 tsp garlic powder
1 tbsp coconut oil
optional: bacon or sausage
salt & pepper


To make:
Preheat the oven to 375 degrees. 
(If not vegetarian, cook bacon or sausage on stovetop).
Place pan on medium heat and melt coconut oil. 
Saute veggies (except for spinach & kale) for about 8 minutes on medium
with coconut oil.
Add greens to pan until wilted (about 2 minutes).
Season with salt, pepper, and garlic. 


Slice top of peppers off and remove core & seeds.


Beat eggs and add seasonings in a bowl. 
Place bell peppers on a pan.
Add cooked veggie mixture to bell peppers. 
Add cooked meat. 
Add eggs evenly between each pepper.
Bake peppers for about 40 minutes.


Viola!
Serve along or with avocado, fruit, or your choice of side.


I ended up bringing one for breakfast at work the next morning and they were just as good!

Sweet Potato Chicken Curry




This round doing Whole30, I wanted to try some new things...
so sweet potato chicken curry it is!
It is whole30 approved, paleo, gluten & dairy free, 
and there is an option to make this vegan!


Serves: 8
Prep time: 10 minutes
Cook time: 45 minutes

What you need: 
2 lbs. sweet potatoes chopped
1/2 avocado
2 chicken breasts (avoid this if vegan)
1/2 cup roasted red peppers
2 tbsp. tahini
2 tbsp. red curry paste
2 tbsp lime juice
4 tbsp cilantro


To make: 
Turn the oven to 425 degrees and bake sweet potatoes until soft.
Once baked, cut sweet potatoes into bite-sized chunks.
Bake chicken.
Once finished, cut up chicken until shredded.
In a food processor, add avocado, roasted red peppers, tahini, red curry paste, and lime juice. 
This mixture should turn into a smooth paste.
Place a pan on the stove on medium heat. 
Mix potatoes, chicken, curry mixture, and cilantro for 5 minutes.
Serve.

There is strength in unity. 


2 months ago, it was looking likely that I'd have to sell my RunDisney 10k spot that's for mid April because of a family situation. That situation changed and I'm able to get to Orlando now. 3 weeks ago, I was beginning to panic that I wouldn't be able to pull off 6 miles before the race. Well, today I did 5. I attribute my successes to finding accountability; everything changes when you can get outside of your own head and have someone to motivate and stand (or run, in this case) beside you. If you need someone to run, walk, or sprint alongside you on this journey, I'll be your biggest cheerleader. Join me in a challenge group.

Throwback Thursday to exactly 3 years ago to the day that I delve into the paleo life. I was 5 years into my journey of investigation about how food is professed and this seemed like the best thing for my health. While I don't think everyone has to go paleo, I think everyone could gain from cutting back on things like white flour, sugar, and processed foods. Just start with a lettuce wrap on your next burger! What I've found is that being gluten free, dairy free, and avoiding sugars can truly heal health issues - the weightloss benefit doesn't suck either.

Healthy Shamrock Shakes

If you love that Shamrock taste, but don't want the repercussions from the calories and chemicals? There are alternative options without missing this St. Patty's Day favorite. The drive-thru at McDonald's used to be a frequented place of mine. I recently learned how to best take care of my body. My latest frequented favorite place is my very own kitchen...where I can recreate the same flavors WHILE also fueling my body with things that will benefit it. Break that McDonald's habit and instead choose vitamins, digestive enzymes, probiotics, prebiotics, antioxidants, and adaptogens. Because of this choice, I know have more energy, sleep better, no longer have headaches, lose weight, and get my daily dose of superfoods. You won't find those things in that McDonald's shake...chances are you'll actually leave those golden arches feeling sluggish, bloated, and have a sugar rush that you'll eventually crash from. Dried "Candy" Strawberries

I wanted a sweet treat while on Whole30, so I decided to make some "candy".


Okay, okay, I tried kiwi too - not my favorite. 


First, set oven for 210 degrees. 

Assort strawberries on a pan and spray lightly with coconut oil.


Wait...wait...wait...wait. 
Smell the amazing-ness!


EAT! They taste like gummies! I refrigerated the ones I didn't eat to save them for later. 
Paleo, vegan, 21 Day Fix approved, and Whole30 approved!
