Snack Attack!

Here's a list of some of my favorite 21 Day Fix approved snacks: 


Organic plain greek yogurt (1 red)
1 tsp of honey
a dash of cinnamon


Strawberries (1 purple)


A banana (purple)
10 pecan halves (blue)
Peanut or almond butter (1 tsp)


Carrots (green)
Hummus (blue)


12 raw almonds (blue)


A small apple (purple)
drizzled with honey 
a dash of cinnamon
a tiny bit of unsweetened coconut flakes (1/2 an orange container)


8 crackers (yellow)
Raw veggies (green)
Hummus (blue)


2 boiled eggs (red)


A banana is the easiest to-go fruit (because it's already in a container)! (purple)


If your'e out and you don't have any snacks, a 'That's It' bar from Starbucks is a great alternative (with only 2 fruits for the ingredients) (2 purple)

Sweet Potato Pancake


Who needs gluten!? Sweet potato pancakes comin' right up!

Mix: 
1 (smashed) sweet potato
1 large egg
1tbsp coconut oil
1 tsp ground cinnamon

This should make 2 normal sized pancakes. 

Pour onto a pan (like you would with pancake batter) and voila!

#GIRLBOSS



Reading everyday has changed everything. I just finished #GIRLBOSS.

Shakeology Chocolate Cookies



The nice part about being friends with like minded people is that when you celebrate their birthday, they're happy with cookies filled with good-for-you superfoods!


What you need: (makes 24)
1 cup Chocolate Shakeology (I prefer vegan)
1 cup all natural almond or peanut butter (I prefer almond)
1 cup quick-cooking rolled oats
1/2 cup raw honey

To make: 
Combine all ingredients in a mixing bowl and mix with a spoon, spatula, or by hand. 
Warning: things will get very sticky!


Roll into 1 inch size balls and flatten each one into a cookie shape. 

They end up turning into a fudge-like cookie, but oh man, are they delicious. You forget they are filled with vitamins, probiotics, digestive enzymes, protein, antioxidants, and herbs!

The best part is that they're ready to eat! I personally like them refrigerated for a few minutes, but who wants to wait for chocolatey goodness?!

Simple Protein-Packed Breakfast


A delicious and nutritious 21 Day Fix approved breakfast: 
1/2 yellow oats
1/2 yellow cooked quinoa
1/2 sliced apple 
1 tsp of honey
a dash of cinnamon
1/2 blue of sliced almonds

Steps: 
I boil (or use my keurig) for some hot water. Mix the oats with water, add quinoa, stir until water is pretty much soaked in ingredients. Add other ingredients on top. ENJOY. 

The best part of this is that it's filled with protein and the quinoa brings in some yummy flavor. It's almost like dessert with all that cinnamon goodness

This would count as 1 yellow, 1 purple, and 1/2 blue for the 21 Day Fix.

Sushi grade tuna with kale raab

A recent catch, I mean, dinner: sushi grade tuna (from Whole Foods) with kale raab (grown local, bought at the Farmer's Market (but you should be able to find similar kale at your local supermarket). The meat/fish guy at Whole Foods was the most helpful! This was the easier dinner, yet it was delicious!

How to cook:
Tuna: add some salt & pepper
cook on the stove for 2-3 minutes on each side

Kale raab: lightly coat pan with olive oil or coconut oil
toss kale into pan 
add salt & pepper, (I added some garlic powder for taste)
cook for 5-10 minutes.

Easy peasy and paleo!

Chocolate Dipped Orange Shake

These Milano Orange cookies are one of my favorite store-bought cookies. Well, with over 23 ingredients and 8 grams of sugar per serving....I'd rather not consume these. 
HOWEVER, I did make a Shakeology recipe to make up for them!


I actually just stumbled on making this delicious recipe and then I realized how much they tasted like Milano orange chocolate cookies. 


To make: 
1 scoop vegan chocolate Shakeology
a blue sized container of oats (from the 21 Day Fix)
1/2 cup water
1/2 cup of almond milk
1/4 avocado for creaminess
1 tsp pure orange extract
1/2 cup of ice


BAM! No more cookie cravings!
