Buffalo Chicken Stuffed Peppers



What you need: 

For the main meal:
4 chicken breasts
1 onion (sliced)
Salt & pepper to taste
Ghee
4 peppers 
1/2 cup hot sauce

For the guacamole: 
2 avocados
1/4 onion, chopped
Lemon juice
salt
Cilantro
Combine + mash



To make: 
Preheat oven to 350 degrees
Slice top of peppers off (and pull out insides)
Mix dried spices
Place the chicken breasts over onions on a greased baking pan
Sprinkle pan with spices
Put some ghee on each chicken breast
Bake for 25-30 minutes or until chicken is cooked
While chicken is cooking, melt 1/4 ghee in a pan and add hot sauce, stir, and set aside
(Make guac)
Once chicken is done cooking, tear into pieces
Place chicken in hot sauce
Put chicken + sauce inside of peppers
Place stuffed peppers on a baking pan
Bake for 35-40 minutes
