Fastpass Fuel


This morning, when I drank my Shakeology for breakfast, I couldn't help but think about the last few days that I've spent with some adorable toddlers. I NOW have a small understanding as to why my mama friends who are in my challenge groups appreciate the simplicity of a meal as a shake.

I can't tell you how grateful I am that I don't have to work Sundays anymore, and I can enjoy church and spend time with our community.

I used to think this way. 

As I saw this sign, I was reminded of when I started on this journey.... I remember having so much on my plate between work and college and trying, trying so hard to feel comfortable in my skin. 

You see, we got married young, I want a typical college student. I was working a full time job, was in school full time, and just trying to survive. The stress of hours spent at the gym at 11pm was only counteracted by my best friend pushing me to get to the gym. 
Fast forward a few years and my friend moved and I didn't have support anymore that I needed. 


I kept seeing my coach share her incredible results + a transformation of coming out of a blur from just recently becoming a mom. After months of watching her journey, I contacted her. She said to join an accountability group with her, I'd have to try Shakeology. I had seen the informercials. I wasn't interested. At. All. After about 3 months, I finally did some research: this wouldn't just help me lose weight but help with anxiety, energy levels, and replace my vitamins. Surely, if this is true, I can at least try it. I did and that was 2 years ago. It's the combination of working out + eating right + superfoods that have kept up my lifestyle but have transformed my health (and my husband's) from the inside out. Mid Year Reflection

It's June...can you believe it? On January 1st, we all set big goals, resolutions, hopes and dreams for the upcoming year. Maybe you've set up plans and those things are coming to fruition....or perhaps some things have fallen to the wayside. Either way, why don't we reflect and think about how the next six months can be even better than the last? What are you going to do with the rest of 2016? 

I'm committing to more sleep, more self-care, more grace, more dialed in nutrition, more happiness, and more giving of love. 

Every month, I run challenge groups online that don't just focus on nutrition + exercise, but also self-love and confidence. If you're wanting to begin a new resolution (yes, mid way through the year) be weird with me, why don't you?

I only run these groups and care for the beautiful souls in them because I have these groups to thank for a transformation in my own life. I want to pay it forward (plus, it's daily accountability continuously for me too)!

Shrimp Avocado Salad

Makes: 3-4 servings

What you need: 
about 24 frozen shrimp
2 avocados
about 30 cherry tomatoes
lemon juice
tumeric, garlic powder, and mustard powder
spinach
salt & pepper

To make: 

1. Thaw and saute shrimp
2. spice with tumeric, garlic powder, and mustard powder


3. chop tomatoes in half and dice avocado in bite sizes


4. in a bowl, place avocado, tomatoes, and lemon juice together. 
5. mix together (without smashing avocado)


6. put shrimp in bowl with avocado and tomatoes
7. place over spinach

We all get our cars looked at....get our oil changed, get it inspected, cleaned on the inside and outside, right? When we get our oil changed, it acts as a reset, right? Lemon Chicken with Pesto

Makes: 6-8 servings

What you need: 
2 lbs boneless chicken breast
2 lemons
2 tbs extra virgin olive oil
1 lb white beans
1 white onion
4 gloves garlic
fresh thyme
2/3 cup chopped dill fronds
salt & pepper

To make: 
1. Soak dried beans in a bowl overnight


2. Set the oven to 350 F
3. In a pot, heat the oil to medium and add garlic and onion - cook for 5-7 minutes
Garlic and onion should be tender
4. Add the beans and turn off heat
5. With one lemon, zest and juice the lemon...add all of this to the beans
6. Add salt and pepper to chicken and layer on top of beans
7. Add water in the pan just above the beans
8. Place thyme on top of chicken
9. Turn heat to high and allow the water to simmer
10. Place in oven for 1.5 hours
11. While it's cooking, make pesto...

You'll need: 
4 cups mint leaves
1/3 blanched almonds
2 garlic cloves
1/4 cup olive oil

To make: 
Blend in a food processor




12. As soon as chicken is done cooking (beans should be soft), remove the thyme
13. Remove chicken and place on a plate
13. Zest and juice the second lemon and add, as well as dill fronds into beans
14. Shred the chicken
15. Serve
