Lemon Chicken with Pesto


Makes: 6-8 servings

What you need: 
2 lbs boneless chicken breast
2 lemons
2 tbs extra virgin olive oil
1 lb white beans
1 white onion
4 gloves garlic
fresh thyme
2/3 cup chopped dill fronds
salt & pepper

To make: 
1. Soak dried beans in a bowl overnight


2. Set the oven to 350 F
3. In a pot, heat the oil to medium and add garlic and onion - cook for 5-7 minutes
Garlic and onion should be tender
4. Add the beans and turn off heat
5. With one lemon, zest and juice the lemon...add all of this to the beans
6. Add salt and pepper to chicken and layer on top of beans
7. Add water in the pan just above the beans
8. Place thyme on top of chicken
9. Turn heat to high and allow the water to simmer
10. Place in oven for 1.5 hours
11. While it's cooking, make pesto...

You'll need: 
4 cups mint leaves
1/3 blanched almonds
2 garlic cloves
1/4 cup olive oil

To make: 
Blend in a food processor




12. As soon as chicken is done cooking (beans should be soft), remove the thyme
13. Remove chicken and place on a plate
13. Zest and juice the second lemon and add, as well as dill fronds into beans
14. Shred the chicken
15. Serve

Freedom through Coaching

The last 2 weekends have been spent out of town traveling. We went to Maryland to go to my uncle's funeral, visited family, then to Baltimore to see our favorite team, meet players, and cross off another MLB stadium off our list, I was able to meet up with an old friend in DC, we got to see snow in MD, visit with my 95 year old grandmother, enjoy Dapper Day, run in a RunDisney race, enjoy time at a Disney resort, take our parents to an Orlando City game, and the list goes on. As I sit here unpacking (finally), I can't help but think how blessed we are to be able to have this freedom to make things like this happen. People matter and being able to pick up and go show their importance in our lives is such a blessing. I was able to run my business while out on the road! Your Path is Beautiful

I was overwhelmed by all of the love & support through messages from friends after sharing a very tiny glimpse of our years of struggling to get pregnant. This quote resonated with me today. Do I believe it? Maybe in the moment, sure, but it's super easy to not stay positive and content hour by hour. I'm so grateful for the growth I've encountered in this journey. The thing is that we're all struggling with something; I'm so grateful to have found my team as we've been through some of the hardest months. Whether it's a coaching wellness team like mine, or just a group of friends, find your people. Sometimes I have to remind myself that I'm doing the best I can to keep things together. Remember your path is beautiful, friend.

It's time to open new doors!


I found 22 minutes on my vacation at Disney to workout (thanks Beachbody on Demand). What I found is that discipline comes from habits. I've developed these habits with a plan and from my amazing community of people who keep me on track! I'm looking for 3 ladies to work with me this month in finding wellness mentally, physically, and internally. It's time to open those new doors!

Healthy Peanut Butter Cups


Makes: 6
Takes: 15 minutes total

What you need: 
2 scoops of chocolate Shakeology
4 tbsp coconut oil
4 tsp almond or peanut butter

To make: 
Place 6 muffin liners in a muffin pan. 
In a small bowl, melt 2 tbsp of coconut oil in the microwave. Just takes a few seconds. 
Add 1 scoop of Shakeology and mix. 


Pour mixture into cups. 
Top with a dollop of nut butter. 
Melt remaining coconut oil & mix in other scoop of Shakeology in. 
Pour on top of cups. 
Freeze for 10 minutes (if you can wait that long).
Enjoy....

and never feel the need to buy Reese's Cups again.

Protect your Positivity


I wish I had learned this earlier in life. What I didn't know is that I have control over my attitude. What I didn't know is that I choose the people that I surround myself with. What I didn't know is what an impact my perspective had on my health/weightloss journey! What I didn't know is that I can protect my positivity! I learned this from my team and from this work. 1 of 3 behaviors our company encourages is personal development: game changer. My team lifts me up daily and I am so grateful; just #174 why I love this coachlife.

You know those objections you have....


A little over 2 years ago, I kept seeing my friend, Becka share her journey. Part of me was like, 'dang woman, I want to do whatever you're doing' and the other part was like, 'will she ever stop sharing that chocolate shake??!' 
Hey, maybe you think that too?

So, after months of stalking her posts (and maybe being a little bitter that she found something that was working for her and I hadn't), I messaged her.
For a few months, we chatted....
These were my objections:
➖"I can't afford Shakeology."
➖"There has to be some ingredients in that drink has to be too good to be true."
➖"Surely I won't get fit with 30 minute workouts." ➖"I won't be able to stay motivated working out at home."
➖"I've tried so many meal plans and tricks, this won't work either."
➖"I don't have time to add something else to my schedule."
➖"I only eat whole foods, I don't want to drink my food."

I finally gave it a shot and I haven't looked back since. All of those objections have turned to successes! Now I help others claim victory with their health! I know you've heard success stories of those that use quick fixes like patches, wraps, or pills but with those things give you long lasting habits that turn into long lasting results? Probably not. Will those things transform your health from the inside out? Probably not.
I'm looking for 3 people that want to quit trying every trendy thing and have me coach them in getting back to the basics with fitness, nutrition, and a positive perspective. Would you ditch those doubts & objections and join us?
